Terra Madre Day Tidings continued…

December 12th dinner at the home of Tonya Lailey and Yves Starreveld

We missed the date proper, but adhered to the local caveat – mostly. B.C. produce, Ontario wine, Québec cheese and maple syrup were our glaring and delicious exceptions.

The gathering was nothing if not convivial – people meeting for the first time fell easily into each others’ company and shared keen appetites and an interest in the flavours and provenance of all that passed their lips.

• Leffer Brothers’ Carrots’ Soup with homemade Sunworks Farm chicken stock, Vital Greens Organic Cream and Québec’s Blue Benedictin.

Wine: Peninsula Ridge’s Ratafia (Niagara)

• Sunworks Farm Beef Tenderloin roasted in an herb and salt crust and served with a gravy of  home-grown onions, Malivoire Pinot Noir (Niagara VQA) and Foothills Creamy butter

• B.C. Butternut Squash puréed with Maple Syrup
• Pan-fried Poplar Bluff Potatoes
• Roasted B.C. organic red onions

• Brassica Horseradish Mustard

Wines: Tawse 2007 Cabernet Franc, Wismer Vineyard (Niagara VQA), Lailey Vineyard 2002 Cabernet Franc (Niagara VQA), Lailey Vineyard 2004 Cabernet Franc (Niagara VQA)

• B.C. Organic Braeburn Apple Crisp made with Highwood Crossing Oats and served with a dollop of Vital Greens Creme Fraiche and a drizzle of Nanking cherry syrup made from the fruit plucked from our backyard in early August
